πŸ‡πŸ‡πŸ‡πŸ‡πŸ‡πŸ‡πŸ‡πŸ‡πŸ‡ β€œPunching down” is the process of breaking up the cap and pushing it back down into the fermenting grapes in the tank. This step in the cellar teams routine process keeps the cap moist during fermentation. The β€œcap” is the solid mass of skins, stems, and pips (seeds) that rise to the top of the fermenting tanks during the fermentation process. There are several pivotal quality control reasons for the cellar team to include punch-downs in their process.
